8 cups washed, hulled and whole strawberries
1/2 cup finely chopped basil
1/4 cup lemon juice
2 cups of sugar

Cooking time: 17 min
Step 1
In a medium saucepan, bring strawberries, lemon juice and sugar to a boil.
Step 2
Simmer on a low heat for 7 minutes.
Step 3
Add the basil and simmer for another 5 minutes.
Step 4
Let stand 5 minutes, turn and skim.
Step 5
Put in sterile pots.
Author's note
Multiply the recipe if necessary. The remaining syrup can be used to make vinaigrettes. Add pectin for a more gelatinous jam.
