Step 1
Wash the mushrooms of Paris.
Step 2
Slice them finely and put them in a bowl.
Step 3
Make a vinaigrette made of salt, pepper, vinegar, olive oil and shallots.

In a frying pan, fry the fins in goose fat. Then add the thyme and garlic.
