Chicken at the moambé :Ingredients

1 chicken
Peanut oil
1 onion

Pili Pili (optional)

For the accompaniment:
1 small box of Saka-Saka(sliced manioc leaves, in the same radius as the sauce)
Rice

Preparation
TOTAL TIME: 50 MIN
Preparation: 30 min
Cooking time: 20 min
Step 1 Cut the chicken into pieces and fry in a little oil. Salt and pepper.
2nd step Put in a pan large enough to hold the chicken with the sauce.
Step 3 In the pan where the chicken roasted, melt a large chopped onion and add it to the pan with a nice bay leaf.
Step 4 Pour over the sauce moambe and put on low heat.
Step 5 The whole must simmer gently for about 45 minutes (the chicken must be well cooked).
Step 6 Season with salt and pepper to taste and possibly pili pili (for palate only!).
Step 7 While cooking the chicken, you will notice that the oil is rising to the surface: be sure to take about a medium ladle that you
Step 8 pour into a small saucepan.
Step 9 Melt a small chopped onion and add the saka saka, a bay leaf, salt, pepper and heat over low heat (the vegetable is already cooked when it is canned).
Step 10 Serve the chicken with pilaf rice, vegetables, sauce (the more there is, the better!).
Step 11 Offer sliced bananas as an accompaniment. PAS LIGHT recipe at all, but a real treat.

The moambé sauce is obtained after pounding the palm nuts.
