Pinot noir oranges jam
Preparation time Pinot noir oranges jam: 45 minutes
Cooking time: 30 minutes
Ingredients (for 18 small pots): - 2 Kg of untreated oranges cut into very thin slices
- 900 mL fresh orange juice
- 2 kg of cane sugar
- juice of 1 lemon
- 3 cloves
- 2 cinnamon sticks
- a little cardamom
- 400 mL Pinot Noir
- a little agar agar diluted in cold water to take the jam
Preparation of the recipe Pinot noir oranges jam :
- After washing, cut the oranges into very thin slices.
- Press the juice of other oranges to about 900 mL.
- Place the orange rings, juice and sugar in a large bowl and let stand overnight.
- The next day put all in a large saucepan and add the lemon juice, clove, cinnamon and cardamom.
- Bring to a boil, stirring regularly.
- Keep to boil for about 15 minutes (until the skin of the oranges is tender) by skimming.
- Add the Pinot Noir and bring to the boil again.
- Maintain the boiling by foaming for about 10 minutes.
- Add diluted agar agar and bring to the boil again.
- After boiling, remove from heat and before putting in pots, think of removing cloves and cinnamon sticks.
- Close the pots and turn them over.
Notes:
I was inspired by different recipes to make this one and I find it rather successful! The little extra: use organic oranges, guaranteed without treatment !!!
