Ingredients (for 6 people): - 500 g puff pastry
- 50 g flour
- 1 egg yolk
- 1 tablespoon of milk
- 4 beans
FOR GARNISH :
- 1 pear
- 50 g chocolate chips
- 100 g of softened butter
- 150 g of powdered hazelnuts
- 150 g icing sugar
- 2 teaspoons of sugar
- 2 eggs
- 1 tablespoon of pear alcohol
Preparation of the recipe Pebbles of the kings pear - chocolate :
Dilute the egg yolk with the milk.
In a bowl, whisk softened butter into ointment, and incorporate eggs, icing sugar, hazelnut powder and alcohol.
Peel the pear and cut into small cubes. Place them in a non-stick frying pan, sprinkle them with 2 teaspoons of sugar, and caramelize for 1 mn.
Spread the dough on a floured worktop, to a thickness of 3 mm. Using a small plate or other, cut out 8 disks 12 cm in diameter.
Spread the previous preparation on 4 discs, stopping at 2 cm from the edges. Sprinkle with diced pears and chocolate chips.
Using a brush, brush the edges with egg yolk, spread the beans, and cover with a second disc. Press on the edges to weld them.
Brown their egg yolk surfaces and place them 20 minutes in the refrigerator.
Preheat oven to Th 8 (240 ° C).
Garnish again the patties , cut the surface, bake and cook for 5 minutes. Reduce the th to 6/7 (190 ° C), and cook for 20 mn.
Place the patties on a rack, and serve them warm.
Notes:
You can present these patties in small plates accompanied by one or two squares of milk chocolate, sprinkled with crushed hazelnuts or diced pears!
