Apricot squares

Ingredients (for 8 people): For the dough:

75 g of almond powder

- 75 g of sugar , preferably red

- 100 g unsalted butter, cut into cubes

- 1 large egg

- 700 g of fresh apricots or 2 x boxes of 410 g canned apricots




For the top:

- 3 tablespoons oatmeal

- 3 tablespoons flour

- 3 tablespoons of sugar

- 1 teaspoon of cinnamon

- 25 g of melted butter

Preparation of the recipe Apricot squares :




Preheat the oven to 180 ° C (thermostat 6).

For the base, put the almonds, flour, sugar and butter in a mixing bowl and beat until the butter is well incorporated. Add the egg, mix well.

Butter a 33 x 9 cm cake pan, pour in the mixture.

Flatten the top with a spatula.

Put the cut apricots in 2 on top and leave a 2.5 cm border around.

Combine oatmeal, flour, sugar and cinnamon. Add the melted butter. Mix well.

Pour over apricots. Cook for about 50 minutes.

Cut into squares, then let cool slightly in the pan.

Serve warm with whipped cream.
