500 g mushroom
4 tomatoes (or 500 g of tomato puree)
10 cl water
2 tablespoons olive oil
20 cl white wine
Parsley
Basil
Coriander
Pepper

Step 1
This recipe is especially suitable for very young mushrooms, border still closed, or barely open, with pink blades.
Step 2
Prepare a marinade with white wine, water, condiments, salt and pepper.
Step 3
Then add the peeled, seeded, crushed tomatoes (or tomato coulis).
Step 4
Bring to a boil and cook for 15 minutes.
Step 5
Add the mushrooms, cleaned and detailed in strips, then boil again for 3 min.
Step 6
You can continue to heat over a low heat until most of the water evaporates, or you can cool and chill until you reach the table service.
Author's note
If after boiling, let it cook for another 30 minutes, adding a little cornstarch to bind the "sauce", the dish is delicious with good fresh bread. If you decide to put the dish in the fridge, it looks more like an appetizer...
