Sweet and sour pork with dried fruit
Preparation time: Sweet and sour pork with dried fruit
Cooking time: 60 minutes
Ingredients (for 4 persons): - 1 kg of pork (chine or shoulder), diced 3 cm
- 120 g raisins
- 1 onion, thinly sliced
- 12 dried apricots cut into mumps and again in two
- 5 cl of cider vinegar
- 15 cl of white wine
- 1 tablespoon honey
- 2 tablespoons of oil
- 50 g butter
- 1 bouquet garni
- 1 pinch of four-spices
- salt , pepper
Preparation of the recipe Sweet and sour pork with dried fruit
Brown the meat in hot oil. Remove and put the onion in the same pot to come back.
Once done, replace the meat by adding the honey and cook until a light caramelization. Then add vinegar, white wine, raisins, apricots and bouquet garni.
Add salt and pepper and add the four spices.
Cover and simmer for 1 hour.
At the end of this time, remove the meat, the fruits and the bouquet garni.
Melt the butter in the syrupy cooking juice and pour this sauce over the meat.
Taste with white rice or couscous seeds, or whatever you want ...
Notes:
The longer you let simmer and the more melting the meat will be.
